Question 1

documentation states it requires POE+ for power method.  Does anyone know if this will work with the 60w 8 port switch us-8-60w?

Yes, this is sort of unclear labeling.  The device will work fine as an AP and with non-POE connected devices powered by 802.11af POE, it doesn't actually require POE+ (at) like it seems to suggest in the marketing and specifications.  The reason it says it requires the higher power is because the device has a POE port itself on one of the two available LAN ports, and with that additional power draw it would require a POE+ supply.  I have 3 AP's powered by the US-8-60W and they each draw 3-4W with both 2.4ghz and 5ghz active.

I am a lay person trying to extend wifi signal in my home without creating a whole new network, I have Cat5 outlets, but how do I power this thing?!?

This access point requires a POE injector or POE switch.  POE stands for Power Over Ethernet, meaning that it gets it's power over the network cable that it also gets it data from.  Check the specs on your switch/router/gateway and see if it has 24v POE.  If not you can pickup a Ubiquiti POE injector on Amazon for less than $10 (just search for POE and look for 24v or more).  A POE injector plugs into a standard outlet, then you plug your cable from your switch into the "in" port and connect your Ubiquiti access point into the "out" port.  On a side note I have a couple of these units at work (I'm an IT professional) and they work REALLY well!

Can this be used with an 802.3 af switch?  i see it only uses 7 watts and i'm not interested in using the poe pass through.

Yes, the UAP-AC-IW-US will work with both 802.3at (POE+)and 802.3af (POE) switches.    Without using the passthrough (left) POE port, my lowest powered AC-Inwall is pulling 4.3w, 82mA, 53.3v  - My highest is pulling 4.4w, 84mA, 53.5 v...     Mine are set not to overlap signal, but you get the picture..  standard POE (af) supports up to 14 watts per device.. you are fine.   Ubiquiti also states that "*The UAP-AC-IW/IW-PRO only support PoE Pass-Through when powered by a UniFi Switch."...  Which I've found not to be true...    I'm running a 190w POE+ switch (TPlink T1600G-28PS).    When I plug another in-wall AC into the POE passthrough port, it powers up fine (it was what I had handy for the test)  - for those interested, the POE+ port off of the TPlink then shows 8.2w, 154mA, and 53.4 v when two are piggybacked... and my Unifi Controller quickly finds and adopts the new AP   -all works fine.  (awesome products.)

For some reason they do state that "*The UAP-AC-IW/IW-PRO only support PoE Pass-Through when powered by a UniFi Switch."    I don't find that to be accurat

Can you mix these in with the uap ac-lite's?

I have this and an ac pro running on the same controller, as for swapping Poe injectors the lite runs off of 24 passive , and the in wall is af/at
