Q: trying to decide which one to get... what exactly does the expression pedal do?

The expression pedal offers several functions. Yes, it can adjust volume or be used as a wah but it can also adjust intensity of effects. It's nice to be able to adjust the amount of overdrive or phaser, etc.., for example, with your foot. You can use it to adjust the pitch when using that effect.

Q: Can i use it with an ukulele because i'm a bass and ukulele player. Also can we connect it to an audio digital interface like focusright Scarlett?

Yes you can connect it to focusrite interface, I don’t know for sure if a ukulele will work with the bass processor since if mainly for the bass guitar.

Q: Unit won't stay powered on for more than a second when under battery power, second one I ordered with same problem, purchased end of August 22.

Use the android plug, it works great for hours, don't drop anything on it, falls, or spills she's easy to bust

Q: How do you get the device that you plug in to play music through Zoom(such as phone) to play in stereo? I can only get mine to play mono.

You must be plugging your phone in with a mono cord, I would try a different aux cable.
